Information about Sushi Kakuta

Thank you very much for visiting the homepage of Sushi Kakuta.

The proprietor, a native of Yōkaichiba City in Chiba Prefecture (present‑day Sōsa City), began his training at a sushi establishment in Ryōgoku, Tokyo. He subsequently refined his craft in Yotsuya, Tokyo, and later at Miura Sushi in Uramachi, Matsumoto. In 1967 (Showa 42), he founded this restaurant. For more than fifty years since our establishment, we have remained dedicated to presenting traditional Edo‑style sushi, meticulously preparing each piece with the utmost care so that the inherent character and flavor of every ingredient may be fully realized.

For over 50 years since our founding, we have devoted ourselves to crafting traditional Edo‑style sushi, taking every step with care to bring out the full character of each ingredient.

Our counter is a single slab of Kiso hinoki cypress, 15 cm thick and just under 6 meters long. Please enjoy a special moment while feeling the warmth of the wood.

 

Our Commitment

We select only domestic fresh fish, carefully chosen each day by the owner himself.

Our rice is locally sourced, using premium rice grown in Nagano Prefecture.

For vinegar, we use yamabuki, a traditional blend that includes rich, fragrant red vinegar.

We strive daily to preserve the unchanged flavors we have offered since opening.

As a family‑run restaurant, we may have our shortcomings, but please feel free to stop by at any time.
